Potato Skins


Storm stayed at moms again! Time for more comfort food. The Island was hit with 50 cm of snow with winds up to 100km/hr. Which made for a lot of drifts taller than 50cm and poor visibility. But my sister and I were quite happy at home munching on these Delicious potato skins we made. They are so simple ... just bake the potatoes the cut them lengthwise down the centre and leave to cool. while they are cooling shred you cheese and cook you bacon. Be carefully not to make your bacon too crispy.
Then scoop out all the potato pulp in to a bowl add a bit of milk, butter, a hand-full of cheese and whip together.

from there scoop your potato mix back into the skins. top with cheese and bacon and bake for 10 mins at 350.
