Potato Skins

Storm stayed at moms again! Time for more comfort food. The Island was hit with 50 cm of snow with winds up to 100km/hr. Which made for a lot of drifts taller than 50cm and poor visibility. But my sister and I were quite happy at home munching on these Delicious potato skins we made. They are so simple ... just bake the potatoes the cut them lengthwise down the centre and leave to cool. while they are cooling shred you cheese and cook you bacon. Be carefully not to make your bacon too crispy.

Then scoop out all the potato pulp in to a bowl add a bit of milk, butter, a hand-full of cheese and whip together.

from there scoop your potato mix back into the skins. top with cheese and bacon and bake for 10 mins at 350.

Ever year about a week from Christmas, My Sister and I go to mom's and do our Christmas baking. We have been doing this for as long as I can remember.

These sugar cookie recipe is from the 1940s.

Cook Time: 10 minutes

Ingredients:

1/2 cup butter

1 cup sugar

1/4 teaspoon nutmeg

1 tablespoon milk

1/2 teaspoon vanilla or other flavoring

2 eggs

2 teaspoons baking powder

1/4 teaspoon salt

2 cups flour
Cream butter with sugar, add beaten egg yolks, flour, baking powder, salt,nutmeg milk, and stiffly beaten egg whites. Add enough flour to make of consistency to roll. cut out with cookie cutter and bake on cookie sheets at 350° for about 8 minutes. cool and decorate

3/4 cups sugar

3/4 cups corn syrup

3 eggs

1/3 cups of butter melted

1/2 teaspoon of salt

1 or 2 cup of pecans

Mix all together the sugar, corn syrup, eggs, butter, and the salt in a large bowl. Then add the pecans! Pour into an unbaked tart shell. 2/3 full Heat oven to 350 and bake tarts for 20minutes or until it sets in the middle. cool for an hour before eating!

Soft Pretzels

3 3/4 cups all purpose flour

1 envelope instant yeast

1 1/2 cup warm water (130 F)

4 t sugar1 t salt

3 T baking soda

1 T sea salt

In a large bowl combine 1 3/4 cup flour 1T sugar 1t table salt 1 pkg yeast Add the warm water, mix well. Stir in about 1 1/2 cup of flour until dough forms a ball and is easy to handle.

Knead for about 5 minutes. Place dough in an ungreased bowl, cover and let rise for about 1/2 an hour.

Punch down and cut into 6 equal size pieces.

Roll each piece to form a long rope about 20" to 24" long, form into a pretzel shape and lay it on a lightly floured surface.

Let pretzels rise until not quite double, about 20 minutes.

*****Bath*****

4 cups water

3 t sugar

3 T baking soda

Bring to a bare simmer and one at a time place each pretzel in for 20 seconds per side.
Remove from bath and place on a lightly greased cookie sheet with good side up. Sprinkle with coarse salt.Bake in the centre of a 350 f preheated oven for 15 minutes or until nicely browned. Cool until lukewarm, dip into melted butter.

Cupcakes:
6 Tbsp. unsalted butter, melted
1-1/3 cups sifted cake flour
1 cup plus 2 Tbsp. granulated sugar
1/3 cup regular unsweetened cocoa powder
1/2 tsp. baking soda
Pinch salt
3/4 cup water
1 egg "large"
1 tsp. vanilla

Adjust rack to center of oven; preheat oven to 375 degrees F. Line the cups of a 12-cup standard muffin tin with paper liners. Melt the butter and cool it until it is warm (it should not be hot when it's added to the batter).
Into a medium bowl, sift together cake flour, sugar, cocoa powder, baking soda, and salt. Add water, egg, vanilla, and melted butter. With hand-held electric mixer at lowest speed (or with whisk), beat ingredients just until combined. Scrape bottom and sides of bowl with rubber spatula. Beat at a low speed for 30 seconds. For ease in handling, transfer batter (which will be on the thin side) to a pitcher of about 4-cup capacity (batter will not fill pitcher).
Divide batter evenly among lined muffin cups; cups will be about two-thirds to three-quarters full. Bake in preheated oven for 14 to 19 minutes, turning pan back-to-front about halfway during baking time. Cupcakes are done when a toothpick inserted into the center of a corner cupcake (that is, a cupcake on one of the corners of the pan) emerges with only a couple of moist crumbs still clinging to it. Do not over bake!
Remove pan to cooling rack. Immediately but gently remove cupcakes from pan to cooling rack (I use a small sharp knife to loosen the cupcakes from the top of the pan, if required, then I gently pry each from the cup with a fork. You'll leave the cupcakes in their paper linings, of course). Cool the cupcakes completely before frosting.

Chocolate Frosting:
3 Tbsp. unsalted butter, softened
1-3/4 cups confectioners' sugar
3 Tbsp. regular unsweetened cocoa powder
Few grains salt
2 to 3 Tbsp. milk

Add 1 cup of confectioners' sugar, the cocoa and salt and 1 Tbsp. milk. With hand-held electric mixer, beat at medium speed until combined. Scrape bowl and beater(s) with rubber spatula. Gradually add remaining confectioners' sugar and remaining milk, beating at medium speed to incorporate, then increasing speed to high and beating until fluffy. Frosting should have a good spreading consistency.

Homemade Chinese FoodThe chicken balls are the same recipe I used for the onion rings in a previous post. Just cook and dice chicken. chill the chicken and coat them in batter throw them in the deepfryer for approximately 5 min until golden !!!

We got a new deep fryer at our house today Thanks to my Uncle Billy (Thanks Billy !!! )

Birthday Cake

Ingredients

1 cup butter
2 cups white sugar
1 teaspoon vanilla extract
4 eggs
3 teaspoons baking powder
3 cups all-purpose flour
1 cup milk
1 pinch salt

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch pan or three 8 or 9 inch round layer cake pans.
Cream the butter and sugar together until smooth and fluffy. Mix in the vanilla extract.
Separate the eggs and set the egg whites aside. Add the egg yolks one at a time to the creamed mixture, beating after each one.
Measure the baking powder into the flour, sift a little of the flour into the creamed mixture. Continue adding the flour and the milk alternately, while continually beating the mixture. Beat the cake batter until a few air bubbles show.
Beat the 4 egg whites with a dash of salt until stiff. Gently fold egg whites into the batter. Pour batter into prepared pan(s).
Bake at 350 degrees F (175 degrees C) until cake(s) test done, approximately 25 to 35 minutes

Cake Icing

3 3/4 c. icing sugar
1 1/2 c. Crisco
1 tsp. salt
1/2 c. milk
1 tsp. vanilla

Today was Nate's first trip to the beach and although he didn't like his toes in the water nor the sand he did seem to enjoy the fresh air because he slept most of the time we were there. I adore him so much he is so precious.
Before we went to the beach we went to a lilly pond it was really pretty I really enjoyed my Day It was Great!!!! Thanks Mom, Dad, Kelli and Nate!!!

Candy Apples

Ingredients

6 apples
3/4 cup and 2 teaspoons white sugar
1/3 cup and 1 tablespoon light corn syrup
1/2 cup and 1 tablespoon and 2 teaspoons water
4 drops red food coloring

Directions

Lightly grease cookie sheets. Insert craft sticks into whole, stemmed apples.
In a medium saucepan over medium-high heat, combine sugar, corn syrup and water. Heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from heat and stir in food coloring.
Holding apple by its stick, dip in syrup and remove and turn to coat evenly. Place on prepared sheets to harden.

Oh my gosh my nephew is growing up so fast!!! It seem like just yesterday when he came home from the hospital. He started cereal and is doing well he makes all sorts of cute faces while experiencing this new thing. I think he is just adorable!!!!! I have been really neglecting my blog lately. Between starting a new job and a scavenger hunt on flickr it seem like I have no time. I started work at the nursing home this week and I have a lot of paper work to finish as well as a couple of appointments I have to go to on top of work. I haven't started actual work yet, just orientation but I really can't wait for the paychecks. I work the overnight shift tonight and it will be my first overnight I really hope I won't mind it. Anyway just thought I would leave a post to say keep checking in and I should have a new post soon.

Apple cobbler

Apple Filling:
5 cups of apples, peeled & sliced
3/4 cup sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup water
1 tablespoon butter, softened

Topping:
1/2 cup flour, sifted
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons butter, softened
1 egg, slightly beaten

In a medium bowl, combine apples, 3/4 cup sugar, 2 tablespoons flour, cinnamon, 1/4 teaspoon salt, vanilla and water. Turn into a lightly buttered 9-inch square pan. Dot apples with 1 tablespoon butter.
Combine all topping ingredients.
Beat until batter is smooth. Spread evenly over apples . Bake 30 minutes at 375° or until apples are tender and crust is golden brown. Serve warm with cream or ice cream.

Try the recipe with strawberries too!!!!

I made my boyfriend French toast for breakfast the other morning, what a lucky guy!!! Anyway mom told me a really interesting story I had never heard about French toast before she told me French toast isn't really French at all! The first piece of bread that was soaked in an egg batter and then cooked seems to have originated in Rome. In legend, French toast evolved when food was dear and every bit had to be used even stale bread. Ancient cooks found that dipping stale bread in a mixture of eggs and milk helped rejuvenate it. Then they cooked it on a griddle and served it up, much like our modern version. Another version of this recipe was reserved only for the wealthiest people of the time, because it used white bread (the most expensive of the time) and exotic (and costly) ingredients like vanilla and almonds. So, it seems French toast was used to feed rich and poor alike!

Ingredients:

2 eggs

1/2C.Milk

1/2 tsp. vanilla

1/8 tsp. cinnamon

6 slices bread

1 tbsp. (or more, as needed) butter

maple syrup, jam, or powdered sugar (for topping)

Put the oven on to Warm.
Beat eggs, milk, vanilla and cinnamon in a shallow bowl or small baking pan.
Dip bread into egg mixture and coat both sides.
Melt butter in skillet over medium heat. Add bread in batches and cook 2 to 3 minutes on each side, or until golden brown. Add more butter as needed.
Keep the cooked slices warm in the oven until all the toast is ready.

Serve the toast warm with syrup, jam, or powdered sugar.

Lemon Meringue Pie

9 inch Baked Pie Shell
1 1/2 C. Sugar
1/3 C. Cornstarch
1 1/2 C. Water
3 Egg, yolks, slightly beaten
3 Tbsp. Butter
1/4 C. Lemon Juice
1 1/3 Tbsp. grated Lemon rind

Preparation:

Heat oven to 400 degrees. Mix sugar, cornstarch in saucepan. Slowly stir in water. Stir constantly over moderate heat until mixture thickens and boils. Boil 1 minute. Slowly stir half of mixture into egg yolks, and then beat into hot mixture in saucepan. Boil 1 minute longer, stirring constantly. Take from heat. Stir until smooth. Blend in butter, lemon juices, and rind. Pour into a baked pie shell. Make a meringue of 3 egg whites 1/4 tsp. Cream of tartar, and 6 tablespoons of sugar. Spread over filling, sealing to the edge. Bake 8 to 10 minutes until delicately browned. Cool at room temperature away from drafts

Wow what a bad weekend it rained all weekend!!! My boyfriend and I were suppose to celebrate our three years so he came home from Moncton (where he work and lives mon to fri) but we didn't end up spending anytime together at all, he was either sleeping or at his buddy's house I was sour!!!! Iwouldn't even talk to him when he left Sunday night. I still am sour! Arrowroot Cookies

1/4 cup butter, softened
1/2 cup white sugar
1 egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup arrowroot flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Cream butter or margarine and sugar. Beat in egg and vanilla.
Stir remaining ingredients together and add. Mix well.
Roll 1/8 inch thick on floured surface. Cut into 2 1/2 inch rounds. Prick with fork. Grease baking sheet. Bake in 350 degree F (175 degrees C) oven until golden, about 8 to 10 minutes. Allow a bit more baking time if rolled thicker.

Saturday I babysat my boyfriend's little sister, Emma. We had fun going outside and taking pictures of the flowers. We played with her dog 3 year old golden retriever. This Is my beautiful nephew Nate, He is so handsome. He is 3 months old and growing By the minute he was 5lbs 6oz when he was born on January 26, He was 3 weeks early, But health. He is the first grandson in our family and he is very very loved. He is going to be one spoiled boy. In this picture he is holding foo foo a knitted toy his nanna (my mom) made for him. He loves it!!! He squeal with glee when he has foo foo, he is so cute. He is very smart and loves to be read to he looks at the pictures and enjoys books with many different colors. He is adored.

Here Is The Recipe For These Yummy Chocolate Chip Cookies
Preheat oven to 350, line baking sheet with parchment paper
Stir together
1 cup of all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Cream together
1/2 cup of golden crisco
1/2 cup granulated sugar
1/4 cup lightly packed brown sugar
Beat in
1 egg
1 teaspoon vanillaBeat until light and fluffy stir in dry ingredients
and fold in 1 cup of chocolate chips place on baking sheet 2 inches
apart and bake for 10 min.
Makes 2 Dozen

This is my nephew Nate, He sure is handosme and growing so fast!!! he is 4 months in 3 days. I love his smiles he is a very happy boy that is very easy to please. If you want to get a smile out of him you just have to bring out the camera.
And this is my dog Angel, a 7 year old border collie she loves to go for walks play frisbie and catch tennis balls. She is a very playful dog and a lot of fun!!!!!

this is a yummy fruit dip,that is simple to make ... put one can of sweet and condensed milk in a microwave safe bowl and add one cup of butterscotch chips and microwave on high for 3 minutes or until melted stir and add 2 tsp of vinegar stir and enjoy this tasty dip with desired fruit .
